A FOOD TRADITION
Orang Asli Cuisine
Orang Asli cuisine refers to diverse foodways among Peninsular Malaysia's Indigenous communities, including distinct Orang Asli groups with different languages, environments and culinary practices. Common foundations include forest greens, tubers, rice, fish, small game, freshwater resources, bamboo shoots, sago and seasonal fruits, with extensive knowledge of gathering and preservation. Techniques include bamboo cooking, roasting, smoking, boiling, fermenting and pounding ingredients into relishes or pastes. Examples associated with particular communities include bamboo-cooked preparations, tapioca-based foods and fermented or smoked fish products. The category is broad and should not imply one uniform Orang Asli cuisine.
