A FOOD TRADITION

Oromo Cuisine

Oromo cuisine encompasses foodways found across a large area of central, western, southern, and eastern Ethiopia, with substantial internal variation and connections to neighboring peoples. Enset, cereals, pulses, milk, meat, and leafy greens appear in different ecological zones. Characteristic preparations include fermenting and processing enset, baking griddle breads, simmering spiced stews, and roasting or boiling grains and legumes. Recognizable examples include marqaa, a porridge or dumpling-like preparation; chechebsa, torn flatbread mixed with spiced butter; and bokolo, boiled or roasted maize. These dishes are not exclusive to Oromo communities and may be shared with adjoining cuisines.
