A FOOD TRADITION

Ovimbundu cuisine

Ovimbundu cuisine is rooted in the central highlands and adjoining parts of western and central Angola, where farming, livestock keeping and market exchange shape the food system. Cassava, maize, millet, beans, groundnuts, pumpkin, leafy greens and dried fish are important staples, with regional access to meat and dairy adding variation. Grain and cassava meals are prepared as firm porridges or funge, while vegetables and proteins are simmered, pounded or roasted over fire. Representative examples include milho or cassava funge with meat sauce, kisaca made from cassava leaves, and lombi, a thick vegetable-and-protein stew. Preparations vary widely between plateau and coastal communities.
