A FOOD TRADITION

Paloc cuisine

Palóc cuisine belongs to the Palóc ethnographic area of northern Hungary and adjacent southern Slovakia. It is associated with frugal rural cooking that makes careful use of potatoes, beans, cabbage, sour cream, pork, poultry, mushrooms, grains and wild or garden herbs. Soups, one-pot dishes, filled pastries, potato preparations and slow-cooked stews are particularly important, with souring and thickening used to create substantial meals from modest ingredients. Representative examples include palóc soup, often made with green beans and sour cream; potato-based dishes such as ganca; and regional cabbage or bean stews. The tradition is embedded in village feast days, seasonal work and distinctive baking customs.
