A FOOD TRADITION
Pamiri Cuisine
Pamiri cuisine in Afghanistan is associated chiefly with Wakhi, Shughni, and related communities in the northeastern high valleys, and it forms part of a broader tradition shared across the Pamir region of Afghanistan, Tajikistan, Pakistan, and China. Barley, wheat, potatoes, legumes, dairy, apricots, walnuts, and mountain herbs are important, with meat used according to household resources and season. Common techniques include boiling, baking flatbreads, drying fruit, culturing dairy, and making dense grain dishes suited to cold elevations. Examples include osh-style rice preparations, qurutob, and herb-filled breads or dumpling-like dough dishes. Local terminology and recipes differ sharply between valleys, so the entry should avoid claiming a single uniform Pamiri canon.
