A FOOD TRADITION

Papua New Guinean Highlands Cuisine

Highlands cuisine covers the foodways of the interior mountain regions, where sweet potatoes became a central staple alongside taro, cassava, bananas, greens, and locally raised pork. Cooking commonly uses earth ovens, heated stones, bamboo containers, boiling, and roasting over embers. Mumu-style communal feasts are particularly important, although earth-oven practice is shared across wider Melanesia. Dishes and preparations associated with the region include roasted pork and root vegetables, sweet-potato-and-greens combinations, and banana or taro cooked in leaf parcels. Highland cooking is strongly tied to ceremonial exchange, agricultural cycles, and clan hospitality rather than to a single standardized recipe tradition.
