A FOOD TRADITION

Pernambucan Cuisine

Pernambucan cuisine represents a prominent northeastern tradition shaped by Indigenous ingredients, Portuguese colonial cooking, African influences, sugar production, fishing, and the foodways of the sertão. Seafood, coconut milk, dried meat, beans, cassava, corn, sugar, and local peppers appear in both festive and everyday dishes. Preparation ranges from clay-pot stewing and frying to roasting, drying, and combining contrasting sweet and savory flavors. Notable examples include caldeirada or peixada prepared with fish and vegetables; carne de sol served with regional accompaniments; and bolo de rolo, a thin rolled cake associated with Pernambuco. It overlaps with neighboring northeastern cuisines but retains a strong and recognizable regional identity.
