A FOOD TRADITION

Pomak Cuisine

Pomak cuisine describes the foodways of Bulgarian-speaking Muslim communities, especially in the Rhodopes and parts of southwestern Bulgaria, while acknowledging that Pomak identity and culinary boundaries vary by locality. Meals commonly use potatoes, beans, wheat, cornmeal, dairy, lamb, mutton, and preserved vegetables, with slow braising, baking, spit-roasting, and communal cooking prominent at religious or family occasions. Regional examples include potato-based patatnik variants, rice- or grain-filled baked pastries, lamb or mutton stews, and festive kurban preparations. Much of this repertoire is shared with neighboring Muslim and Christian Balkan communities, so it is best catalogued as a cultural foodway rather than an exclusive national cuisine.
