A FOOD TRADITION
Principe Island Cuisine
Príncipe Island cuisine describes the foodways of São Tomé and Príncipe’s smaller northern island, shaped by island Creole communities, Portuguese colonial history, and longstanding West and Central African exchange. It is related to, but regionally distinguishable within, the national tradition through reliance on locally caught fish and shellfish, plantains, bananas, cassava, breadfruit, leafy greens, coconut, and palm products. Cooking commonly uses stewing, grilling over fire, pounding, and frying. Representative preparations include fish calulu, grilled or stewed reef fish with plantain, and banana fritters. The category should remain open to shared ingredients and techniques rather than claiming that any dish originated exclusively on Príncipe.
