A FOOD TRADITION
Riojan Cuisine
Riojan cuisine comes from the Ebro valley and surrounding foothills, where vegetable gardens, vineyards and pastoral farming shape a straightforward, produce-led tradition. Potatoes, peppers, onions, tomatoes, beans, lamb, pork and seasonal vegetables are staples, with slow stewing and roasting especially common. Patatas a la riojana combines potatoes, chorizo and paprika in a rustic stew; menestra de verduras highlights a mixture of local vegetables; and chuletillas al sarmiento are lamb chops grilled over vine prunings. Wine is an important culinary accompaniment and cooking influence.
