A FOOD TRADITION

Saint Lucian Indo-Caribbean Cuisine

Saint Lucian Indo-Caribbean cuisine is a distinct but overlapping strand of the island’s wider Creole foodways, associated with Indo-Saint Lucian communities and broader Caribbean exchange. It commonly combines rice, peas, lentils, chickpeas, flatbreads, coconut, and meats or fish with spice blends built from cumin, coriander, turmeric, garlic, and pepper. Typical methods include frying or toasting aromatics, simmering curry gravies, cooking dhal until soft, and griddling filled breads. Recognizable examples include Saint Lucian-style roti with curried chicken or vegetables, dhal puri, and curry goat served with rice. These foods are not exclusive to Saint Lucia and often overlap with neighboring West Indian traditions.
