A FOOD TRADITION

Sanaani Cuisine

Sanaani cuisine refers to the established highland food tradition associated with Sana'a and its surrounding uplands, where cool conditions, terraced farming, and long-standing urban culinary culture shape the table. Wheat, sorghum, fenugreek, legumes, dairy, clarified butter, herbs, and lamb or chicken are used in layered breads, porridges, soups, and slow-cooked dishes. Characteristic techniques include baking in traditional ovens, simmering meat with fenugreek-based sauces, and combining bread with savory broths. Saltah, fahsa, and bint al-sahn are recognizable examples, although each is also encountered beyond Sana'a. This entry is regional, not a claim of exclusivity.
