A FOOD TRADITION

Sardinian Cuisine

Sardinian cuisine reflects the island’s pastoral interior, coastal communities, and long Mediterranean history. Durum wheat, sheep’s milk cheese, lamb, suckling pig, legumes, bottarga, tuna, shellfish, herbs, and wild greens appear across regional variations. Traditional techniques include baking, roasting over embers, drying, preserving, and making hand-shaped breads and pasta. Representative foods include pane carasau, culurgiones, and porceddu. Coastal cooking often features seafood and fregula, while inland cooking retains pastoral and shepherding traditions. Sardinian cuisine is therefore an island-wide cultural tradition with substantial local diversity.
