A FOOD TRADITION

Sepik River Cuisine

Sepik River cuisine reflects riverine and floodplain communities in the northern interior, with fish, freshwater shellfish, sago, bananas, yams, and leafy plants forming important foundations. Fish may be roasted, smoked, wrapped in leaves, or simmered with greens, while sago is processed into a pliable staple and used in pancakes or dumpling-like preparations. Cooking is often conducted over open fires or in leaf-lined vessels, and foods are adapted to seasonal river levels and garden production. Examples include smoked or roasted river fish, sago pancakes, and fish-and-greens stews. The tradition is shared across culturally diverse Sepik communities rather than belonging to one ethnic group.
