A FOOD TRADITION
Shona Cuisine
Shona cuisine is associated with the Shona-speaking communities of much of central, northern and eastern Zimbabwe, while also sharing practices with neighboring parts of Mozambique and Zambia. Maize meal, known locally as sadza, commonly anchors meals alongside leafy vegetables, beans, groundnuts, pumpkin, sorghum and meat when available. Cooking often involves simmering relishes, stewing, drying seasonal produce and preparing grains into firm porridges. Representative dishes and preparations include sadza with muriwo relish, dovi, a groundnut-based stew often made with vegetables or meat, and mutakura, a cooked mixture of grains and legumes. Wild greens and seasonal mushrooms are also important in many rural foodways.
