A FOOD TRADITION
Shopluk Cuisine
Shopluk cuisine refers to the rural foodways of the broader Shopluk cultural area around western Bulgaria and neighboring parts of Serbia and North Macedonia. It is built around beans, potatoes, cabbage, peppers, onions, maize, yogurt, fresh cheese, pork, and lamb, with simple stewing, baking, grilling, and preservation suited to a continental inland climate. Shopska salad is a familiar expression of the region’s fresh vegetables and brined cheese, while bean stews, baked peppers with cheese, rustic savory pies, and grilled minced-meat preparations show the everyday repertoire. Shopluk cooking is not confined to modern administrative borders and should be presented as a shared regional tradition.
