A FOOD TRADITION

Silesian Cuisine

Silesian cuisine developed in the industrial and historic borderlands of Upper and Lower Silesia, drawing on Polish, German, Czech and local traditions. It is associated with potatoes, cabbage, pork, beef, flour-based preparations, dark sauces and richly spiced gingerbread. Boiled and braised foods are especially characteristic, as are dense dumplings and festive baking. Representative dishes include kluski śląskie, potato dumplings served with gravy; rolada śląska, rolled beef with filling; and modra kapusta, sweet-and-sour red cabbage. Silesian home cooking also includes hearty soups and celebratory poppy-seed or gingerbread pastries, reflecting both working-class and rural foodways.
