A FOOD TRADITION
Slovenian Karst cuisine
Slovenian Karst cuisine developed on the limestone plateau between the Vipava Valley, the coast, and the Italian border. Its foodways emphasize hardy local crops, sheep and pork products, wild herbs, mushrooms, beans, cabbage, potatoes, and wines such as teran. Drying, salting, air-curing, fermentation, and slow cooking are particularly important adaptations to the plateau’s climate and historic household economy. Commonly associated foods include kraški pršut, air-cured ham; jota, a soup of beans, sauerkraut or sour turnip, and potatoes; and frtalja, a rustic herb or seasonal-vegetable omelet. Karst cuisine shares dishes with neighboring Friulian, Istrian, and Littoral traditions without being reducible to any one of them.
