A FOOD TRADITION

Southern Iranian Cuisine

Southern Iranian cuisine covers coastal and island foodways along the Persian Gulf, including Hormozgan, Bushehr and parts of southern Khuzestan. Seafood, rice, dates, tamarind, fenugreek, chilies, garlic, dried lime and aromatic spice blends are central, with local differences between fishing communities and inland settlements. Characteristic methods include grilling or frying fish, preparing thick stews, steaming spiced rice and making breads on hot surfaces. Examples include qaliya mahi, shrimp-based khoresh, and hāvari, a spiced fish or shrimp rice dish associated with the Gulf coast. These traditions are historically connected to Arab, African, Indian and Persian Gulf cuisines.
