A FOOD TRADITION

Southern Mozambican Cuisine

Southern Mozambican cuisine reflects Tsonga, Ronga and neighboring southern African traditions, with additional Portuguese and Indian Ocean influences in urban and coastal settings. Maize meal, cassava, peanuts, beans, seasonal greens and seafood form a practical staple base, while meat and chicken are often grilled or simmered with chile, garlic and citrus. Leafy vegetables may be pounded or cooked into relishes, and peanut sauces are a recurring technique. Xima served with greens or fish, cacana and other bitter-leaf preparations, and peri-peri grilled chicken are recognizable examples. Coastal areas also incorporate prawns and other seafood into stews and grilled dishes.
