A FOOD TRADITION

Sukuma Cuisine

Sukuma cuisine is associated with the Lake Victoria basin and northwestern Tanzania, especially among Sukuma-speaking communities. Everyday meals commonly center on ugali made from maize or, in some areas, cassava, accompanied by leafy greens, beans, fish, or meat. Sukuma wiki and other greens are cooked with onion, tomato, groundnut, or small amounts of meat, while dried lake fish and dagaa contribute strongly flavored stews and relishes. Rice and sorghum also appear according to locality and household resources. Representative foods include maize ugali with cooked greens, bean stews, and dagaa-based sauces. The tradition is shaped by both inland farming and access to Lake Victoria fisheries.
