A FOOD TRADITION

Svan Cuisine

Svan cuisine is associated with the highland communities of Svaneti in northwestern Georgia, where preservation, grains, potatoes, dairy, and hardy mountain seasonings shaped cooking around seasonal access. A signature seasoning, svan salt, combines salt with herbs, garlic, and spices, although household blends vary. Dough foods, meat, potatoes, beans, and cheese are prepared in substantial forms suited to communal meals and winter stores. Representative dishes include kubdari, a spiced meat-filled bread; tashmijabi, mashed potato mixed with cheese; and chvishtari, cornmeal bread with cheese. Svan food shares techniques and ingredients with other Georgian regions while retaining a distinctive highland profile.
