A FOOD TRADITION

Sylheti Cuisine

Sylheti cuisine is associated with the Sylhet region and Sylheti-speaking communities in Bangladesh and across the wider diaspora. It is related to Bengali cooking but has a distinctive balance of sour, bitter, aromatic and smoky flavors, shaped by river fish, wetlands, citrus, bamboo and abundant herbs. Rice, dal, beef, fish and seasonal greens are staples, while dried and fermented ingredients are used prominently. Characteristic preparations include slow-cooked meat, mashed or bhorta-style accompaniments, and dishes sharpened with satkora, a local citrus. Representative examples include beef with satkora, shutki bhorta and pitha such as patishapta or chitai.
