A FOOD TRADITION

Syrian Armenian Cuisine

Syrian Armenian cuisine reflects Armenian communities established in Syria, particularly in Aleppo and other urban centers, while also incorporating local Levantine ingredients and methods. It commonly uses lamb, bulgur, wheat, eggplant, peppers, tomatoes, garlic, walnuts, herbs, and dried fruit. Characteristic techniques include finely grinding meat and grains, baking filled pastries and breads, grilling, pickling, and preserving fruit. Examples include sou borek, mante, and Armenian-style lahmajoun, with regional versions of kibbeh and stuffed vegetables also prominent. This is a transnational Armenian tradition with a substantial Syrian expression, especially in family and community cooking, rather than an exclusively Syrian invention.
