A FOOD TRADITION

Syrian Coastal Cuisine

Syrian coastal cuisine belongs to the Mediterranean shoreline around Latakia, Tartus, and nearby mountain communities. It combines fish and shellfish with olive oil, bulgur, wheat, citrus, tomatoes, peppers, garlic, coriander, and tahini, while inland foothill cooking contributes greens, legumes, and preserved foods. Characteristic methods include grilling or baking fish, pounding ingredients into sauces, stuffing vegetables, pickling, and making intensely seasoned mezze. Examples include samke harra, sayadiyeh, and muhammara, with regional variations of kibbeh and stuffed grape leaves also common. The tradition overlaps with Lebanese and broader eastern Mediterranean cooking rather than existing as an isolated national style.
