A FOOD TRADITION

Syrian Jazira Cuisine

Syrian Jazira cuisine develops across the northeastern plains around the Khabur and upper Euphrates, drawing on Arab, Kurdish, Syriac, Armenian, and other local communities. Wheat, bulgur, rice, lentils, chickpeas, lamb, yogurt, clarified butter, seasonal vegetables, and dried fruits are central. Characteristic practices include hand-formed bulgur dishes, hearth breads, slow braises, stuffed vegetables, dairy preparation, and preservation for harsh summers and winters. Examples include kibbeh, dolma, and hearty rice-and-meat preparations, with locally varied soups and flatbreads. This is a shared Upper Mesopotamian tradition with porous borders, not an exclusive cuisine of one ethnicity or modern administrative unit.
