A FOOD TRADITION
Szekely Cuisine
Szekely cuisine is associated with the Hungarian-speaking Szekely communities of eastern Transylvania and the Carpathian interior. It emphasizes pork, smoked meats, cabbage, potatoes, beans, mushrooms, sour cream, paprika, caraway, and forest products, reflecting both mountain conditions and Hungarian culinary practice. Fermentation, smoking, pickling, baking, and slow simmering are important household techniques. Examples include szekely gulyas, a sauerkraut and pork stew; turos puliszka, cornmeal with curd cheese; and kurtoskalacs, a spit-baked sweet pastry. This is a cultural tradition within Romania that also belongs to the wider Hungarian culinary sphere, so the entry should avoid treating it as an isolated or exclusively Romanian cuisine.
