A FOOD TRADITION

Szekler cuisine

Szekler cuisine is associated primarily with Székely communities in eastern Transylvania, while related Szekler cultural and culinary influences also appear in Hungary. It combines mountain and forest products with Hungarian techniques: pork, bacon, cabbage, potatoes, cornmeal, sour cream, mushrooms, berries, dairy and preserved meats are central. Smoking, fermentation, baking, grilling over fire and slow cooking in heavy pots reflect highland household economies and long winters. Commonly cited examples include Székelykáposzta, a sauerkraut and pork preparation; kürtőskalács, a spit-baked sweet bread; and hearty soups or stews made with smoked meat and potatoes. The tradition should be represented as shared across borders, not as an exclusively Hungarian invention.
