A FOOD TRADITION
Tausug Cuisine
Tausug cuisine is centered in the Sulu Archipelago and Tausug communities in Mindanao and the wider Philippines, with strong maritime and regional trading connections. Rice, seafood, coconut, beef, chicken, cassava, turmeric, chilies, ginger, and aromatic leaves are frequent ingredients. Fish may be grilled, dried, salted, or cooked in sour and coconut-based broths, while meat is often simmered with spice pastes or prepared for communal occasions. Representative foods include tiyula itum, piassak, and kumukunsi. The cuisine shares elements with neighboring Moro and island Southeast Asian traditions while retaining a recognizable Tausug cultural setting.
