A FOOD TRADITION
Tosk cuisine
Tosk cuisine is associated with southern Albania and the wider Tosk cultural area. Its cooking combines inland agricultural traditions with Mediterranean and Ottoman influences, using vegetables, beans, herbs, olive oil, yogurt, cornmeal, lamb and freshwater or coastal fish where available. Characteristic methods include baking in earthenware dishes, slow braising, stuffing vegetables and preparing savory pies with thin pastry. Examples include tavë kosi, baked lamb with yogurt; përshesh, a bread-based preparation often served with poultry or broth; and byrek, layered pastry filled with greens, cheese, pumpkin or meat. The tradition encompasses substantial local variation, including distinctive practices in southern valleys and coastal districts.
