A FOOD TRADITION

Trás-os-Montes Cuisine

Trás-os-Montes cuisine comes from Portugal’s remote northeastern uplands, where cold winters, dry valleys, pastoralism, chestnut groves, olive cultivation, and household meat preservation shaped a substantial cuisine. Frequent ingredients include pork, cured sausages, potatoes, beans, cabbage, chestnuts, mushrooms, olive oil, and game. Traditional techniques include smoking, salting, curing, wood-fired roasting, and long simmering in earthenware or heavy pots. Notable examples include alheira, a smoked sausage with a distinctive bread-based filling; posta mirandesa, thickly grilled beef; and folar transmontano, a savory enriched bread associated with festive occasions.
