A FOOD TRADITION
Tripoli and North Lebanese cuisine
Tripoli and the northern Lebanese coast have a recognizable culinary tradition shaped by port commerce, inland villages and proximity to northern Syria. Chickpeas, fish, lamb, bulgur, tahini, garlic, citrus, warm spices and wheat-based pastries are central, with both seafood cooking and elaborate urban sweets. Common techniques include grinding and stuffing, frying, braising, baking and preparing sauces rich with sesame or chili. Examples include samak harra, fish with a spicy tahini-based topping; kibbeh bil laban, bulgur-and-meat dumplings in yogurt; and Tripoli’s syrup-soaked pastries such as znoud el sit. The repertoire is shared across borders, but Tripoli remains an important Lebanese center for these culinary forms.
