A FOOD TRADITION

Tsonga cuisine

Tsonga cuisine is associated with Limpopo, Mpumalanga, and Tsonga-speaking communities extending into southern Mozambique and Eswatini. Maize, cassava, peanuts, beans, leafy vegetables, pumpkin, fish, and locally available game or meat shape the food tradition. Techniques include pounding grains and nuts, boiling and stewing, drying foods, fermenting grain, and preparing vegetables as relishes. Notable examples include xigugu, a maize-and-groundnut preparation; tihove, a maize-and-bean dish; and cassava-based foods served with vegetable or meat stews. Coastal and inland environments create meaningful variation, so the cuisine is best understood as a connected regional tradition rather than a rigid national category.
