A FOOD TRADITION
Tyrolean Cuisine
Tyrolean cuisine belongs to the central and eastern Alpine region of Austria and shares historical foodways with South Tyrol and neighboring mountain areas. It developed around farmstead ingredients such as rye and wheat, potatoes, cabbage, dairy, bacon, game, and preserved meats, using drying, smoking, baking, boiling, and griddle cooking to support mountain life. Representative dishes include Tiroler Gröstl, Speckknödel, and Käsespätzle. The cuisine includes both rustic household food and festive pastries, while its cross-border character should be acknowledged rather than assigning every dish exclusively to Austria.
