A FOOD TRADITION

Udmurt Cuisine

Udmurt cuisine reflects the forest-steppe environment of the western Urals and the foodways of a Finnic people living alongside Russian, Tatar, and other communities. Rye and wheat flour, potatoes, cabbage, onions, mushrooms, berries, dairy, pork, and river fish are common, with household baking and seasonal preservation especially important. Dumplings and filled pastries are central forms, while boiling, oven baking, souring, and frying are widely used. Representative dishes include perepechi, small open savory tarts; pelnyan dumplings; and tabani, thick griddle cakes often served with accompaniments. The tradition is shared and historically interconnected, but not reducible to Russian or Tatar cuisine.
