A FOOD TRADITION

Ukrainian Canadian Cuisine

Ukrainian Canadian cuisine developed especially in Prairie settlement communities and remains visible in family cooking, churches, festivals, and community halls across Canada. It emphasizes potatoes, cabbage, beets, wheat flour, pork, dairy, mushrooms, and preserved fruits and vegetables. Common techniques include boiling, baking, braising, pickling, fermenting, and making filled doughs. Representative dishes include perogies, holubtsi or cabbage rolls, borscht, and pampushky or other yeast-based baking. Canadian versions often reflect local ingredients, church supper traditions, and contact with Métis, Indigenous, Mennonite, and other Prairie foodways. It is a Canadian cultural tradition with roots shared across the wider Ukrainian diaspora.
