A FOOD TRADITION
Uyghur cuisine
Uyghur cuisine is strongly established in southeastern Kazakhstan, especially around Almaty and the historical Semirechye area, while remaining a shared tradition of the wider Uyghur homeland and diaspora. It combines wheat-based foods, lamb or beef, onions, carrots, peppers, garlic, and cumin with techniques such as hand-pulling noodles, stir-frying, stewing, and baking in a tandoor-like oven. Characteristic foods include laghman, a noodle dish with a vegetable-and-meat sauce; manti, steamed filled dumplings; and samsa, baked meat pastries. Polished rice dishes, kebabs, flatbreads, and tea also form important parts of Uyghur food culture in Kazakhstan.
