A FOOD TRADITION

Vaudois cuisine

Vaudois cuisine is associated with French-speaking Vaud, extending from Lake Geneva and the La Côte vineyards toward the Jura and Alpine foothills. It emphasizes cabbage, leeks, potatoes, lake fish, pork, cream, cheese, and wine, with practical household cooking shaped by farming, vineyards, and market towns. Sausages are commonly simmered or baked alongside vegetables, while gratins, tarts, and slow-cooked stews reflect the regional repertory. Characteristic examples include papet vaudois, a leek-and-potato preparation served with saucisse aux choux; gâteau au fromage; and malakoff, a fried cheese fritter associated with the western lakeshore. These dishes form a coherent regional tradition rather than merely a list of specialties.
