A FOOD TRADITION

Venetian Cuisine

Venetian cuisine reflects the lagoon, the Po plain, and the historic commercial links of the Republic of Venice. Rice, cornmeal, seafood, salted fish, beans, seasonal vegetables, and white wines are central, while spices and sweet-sour combinations recall older maritime exchange. Cooking includes simmering seafood, preparing creamy rice dishes, and pairing fish with onions or vinegar. Representative dishes include risi e bisi, sarde in saor, and baccalà alla vicentina. Inland Veneto contributes polenta, radicchio, and braised meats, making the tradition broader than the food of Venice itself.
