A FOOD TRADITION
Vili Cuisine
Vili cuisine belongs to the historic coastal culture of the Republic of the Congo, especially around the Loango coast, and has close connections with neighboring coastal peoples in Gabon and Angola. It emphasizes marine and estuarine fish, shellfish, cassava, plantains, peanuts, palm products, and aromatic peppers. Fish may be grilled, smoked, salted, wrapped in leaves, or simmered into richly seasoned sauces, while cassava is prepared as chikwangue or a thick accompaniment. Examples include liboke-style fish cooked in leaves, smoked-fish sauces with cassava leaves, and grilled or stewed coastal fish served with plantain or cassava. The tradition reflects long-standing fishing and trading networks rather than an isolated national cuisine.
