A FOOD TRADITION

Volga Tatar cuisine

Volga Tatar cuisine is maintained in Kazakhstan by Tatar communities whose histories connect the country with the Volga-Ural region and wider Eurasian migration. It centers on wheat and rye flour, potatoes, onions, beef, lamb, poultry, dairy, and tea, with baking, boiling, braising, and filled-pastry making as recurring techniques. Familiar examples include echpochmak, a triangular pastry filled with meat, potato, and onion; peremech, a fried or baked meat-filled pastry; and chak-chak, a fried dough sweet bound with honey. Soups, noodles, dumplings, and festive baked goods are also important. The tradition is shared across borders and should not be treated as uniquely Kazakhstani.
