A FOOD TRADITION

Western Norwegian Cuisine

Western Norwegian cuisine is associated with fjords, islands, steep farm landscapes, and maritime communities from the southwest through the fjord districts. Fish and shellfish combine with lamb, goat dairy, potatoes, grains, and preserved meats; local foodways often connect household farming with seasonal fishing. Salting, curing, drying, smoking, souring, and slow cooking are recurring techniques, while baking and cultured dairy remain important. Characteristic examples include raspeballer or komle, potato-and-flour dumplings; pinnekjøtt, cured and steamed lamb ribs; and rømmegrøt, sour-cream porridge. These foods also occur elsewhere in Norway, but their Western Norwegian context is especially established.
