A FOOD TRADITION

Xhosa cuisine

Xhosa cuisine is rooted primarily in the Eastern Cape and in Xhosa-speaking communities elsewhere in South Africa. Its foundations include maize, sorghum, beans, pumpkins, wild and cultivated greens, fermented milk, and meat, with local coastal communities also drawing on seafood. Cooking commonly involves boiling, pounding, fermenting, drying, and roasting over open fires. Characteristic preparations include umngqusho, a maize-and-bean dish; umpoqoko, a fermented maize preparation; and umvubo, crumbly maize meal mixed with fermented milk. Food traditions vary by household and landscape, but communal meals, initiation contexts, and seasonal availability remain important parts of the cuisine’s cultural setting.
