About Accara

Marie-Claude Mendy’s accara follow the Senegalese black-eyed-pea fritter tradition. This named version uses peeled peas and shallots, with optional garlic, and includes her linked kanni accompaniment.

Unrefined coconut oil cooks the fritters, seasoned with salt and black pepper. The kanni combines tomato, onions, garlic, bell pepper, habanero and cayenne with a little vinegar.

The fritters have golden fried surfaces around a fine pea batter. They are drained and explicitly served at room temperature, with the zesty sauce alongside.
