About Ashlyan-Fu

This Karakol version was recorded by dutyfreezzz after tasting Dungan ashlyan-fu at the local market. The handwritten recipe came through the traveller’s driver, Dima, from his sister.

Egg noodles and starch jelly are paired with a meat sauce containing onion, salted bell pepper, tomato paste and egg. A separate vinegar sauce supplies acidity, while garlic and hot red pepper flavour the laza.

The five components form a layered noodle bowl with contrasting soft noodles and set jelly. Potato pirozhki are described as a customary companion.
