About Baek Kimchi

Hyosun’s baek kimchi is a mild white kimchi made with napa cabbage and a filling of radish, pear, scallion and aromatics. Red and yellow bell peppers add colour and sweetness to her rendition.

Salted shrimp and anchovy fish sauce season the vegetables. Glutinous-rice paste is mixed into the brine, while minari, pine nuts, chestnuts, jujubes and sesame seeds are optional additions.

The filling is spread between the cabbage leaves before each portion is folded into a jar. Fermentation develops the subtle tang and crunchy texture that the author describes for the finished kimchi.
