Burmese Tomato Salad

This profile follows a Burmese green tomato salad adapted from the Burma Superstar cookbook, a distinct tomato-salad version associated with Myanmar. Firm green and red tomatoes are dressed with shallot, garlic, chilli, lime and peanuts.

Tart tomato and lime meet the savoury bite of shallot and garlic, with fresh coriander and two forms of chilli adding fragrance and warmth. Peanut oil and crushed roasted peanuts give the salad a rich, nutty depth.

The tomatoes remain firm and juicy, while crushed peanuts add coarse crunch. Red and green tomato wedges, pale shallot and leafy coriander make a bright, loosely dressed salad.
