About Champurradas

Michele Peterson's champurradas combine all-purpose wheat flour with masa harina, piloncillo and white sugar. The Guatemalan cookies have a crisp, buttery character and a topping of white sesame seeds.

Butter, vegetable shortening, eggs and vanilla bring the dough together. It is rolled thin and cut into rounds before an egg-and-water wash helps the sesame seeds cling to the surface.

The baked cookies cool completely on a rack. Peterson serves them with coffee, recalling the place of champurradas in Guatemalan breakfasts and afternoon breaks.
