DISH RESEARCH · Main dish
Chashushuli
Beef and onions slowly stewed with tomato, Georgian spices, garlic and fresh herbs.

About Chashushuli
Kateryna Maznikova's chashushuli cooks beef and an equal quantity of onion slowly together. The covered pot draws its cooking liquid from the meat and onions, producing a stew without added broth or water.
Grated fresh tomato joins the tender meat with utskho-suneli, Imereti saffron and cayenne. Ground coriander is an optional seasoning, while fresh coriander, basil and garlic are added at the end.
The stew rests briefly after it leaves the heat. Its sauce combines the softened onions, tomato and meat juices, with the fresh herbs and garlic finishing the dish.
