Nagi Maehashi’s chicken noodle soup starts with a whole chicken simmered gently with vegetables and herbs. The resulting golden broth carries shredded chicken, fresh chopped vegetables and noodles or pasta.
Garlic, carrot, celery, onion, peppercorns, bay and thyme flavour the stock. The cooked chicken is lifted out and shredded, while the bones and selected broth vegetables are removed; only part of the chicken meat is needed for the soup.
A fresh batch of onion, garlic, carrot and celery softens slowly in olive oil without browning. The homemade broth is poured into this pot, leaving settled residue behind and adding water if necessary.
Stock seasoning, black pepper and optional thyme and bay are added before the noodles cook in the bubbling broth. Shredded chicken returns near the end to warm through, followed by seasoning to taste.
The soup is served immediately with parsley as an optional garnish. Maehashi offers many uses for the remaining cooked chicken and an alternative of adding the very soft stock vegetables back; those are separate choices from the selected fresh-vegetable soup.
